A laying flock produces eggs every day, and on most operations those eggs are collected, graded, and moved toward a buyer within a day or so of being laid. That speed is the defining fact of poultry withdrawal recordkeeping: there is very little time between a hen laying an egg and that egg leaving the farm, which means there is very little time for a slow record to catch up.
